A dental cream or gel comprising a carrier material, dextranase having an activity of about 20 to 400 units/mg. protein in amount of about 0.001 to about 5% by weight and a non-toxic compound which provides an effective amount of at least 0.001% of stabilizer/activator magnesium metal ions, said metal ions being provided from water-soluble salts selected from the group consisting of chlorides, sulfates and nitrates, namely magnesium chloride, magnesium sulfate and magnesium nitrate, said metal ions being effective to stabilize said dextranase and activate its dextranase activity.
