Total Claims: 17
Claim 1
Independent Claim 49 words
In a process for processing an animal meat comprising the steps of scalding and chilling said animal meat, the improvement comprising contacting said animal meat with an aqueous bactericide comprising a mixture of two or more organic acids and a surfactant during both of said scalding and chilling steps.
Claim 2
Dependent Claim 49 words
In a process for processing an animal meat comprising the steps of scalding and chilling said animal meat, the improvement comprising contacting said animal meat with an aqueous bactericide comprising a mixture of two or more organic acids and a surfactant during both of said scalding and chilling steps.
Claim 3
Dependent Claim 38 words
A process as claimed in claim 1, in which said mixture of two or more organic acids consists essentially of acetic acid and at least one acid selected from the group consisting of malic acid and lactic acid.
Claim 4
