Abstract
Abstract Soluble dietary fiber-and-maltodextrin-containing products can be prepared by hydrolyzing a cereal flour or a blend of cereal flour and starch with an α-amylase and recovering the soluble fraction. The recovered material comprises β-glucans and/or pentosans as the dietary fiber. These compositions are colorless and devoid of inherent undesirable flavors and are, therefore, uniquely suitable for use in a variety of foods.

Claims Analysis
Total Claims: 16
Claim 1
Independent Claim
92 words
A method for producing a composition comprising water-soluble dietary fiber and maltodextrins comprising the steps of: a. treating an aqueous dispersion of a gelatinized, milled, cereal substrate with an α-amylase under conditions which will hydrolyze the substrate starch without appreciable solubilization of the substrate protein and thereby yield a soluble fraction and an insoluble fraction; b. separating said soluble fraction from said insoluble fraction under conditions which minimize the level of protein in the soluble fraction; and c. recovering from said soluble fraction said water-soluble dietary fiber substantially free of water-insoluble fiber.
Claim 2
Claim 3
Dependent Claim
23 words
The method as described in claim 1 wherein the solids content of said cereal substrate dispersion is in the range of about 10-40%.
Claim 4

The method as described in claim 1 wherein said cereal substrate is whole barley flour.
Claim 6
Dependent Claim
41 words
The method as described in claim 1 wherein the α-amylase is a thermostable α-amylase and the cereal substrate is gelatinized concurrently with the hydrolysis by treating the substrate with the α-amylase at a temperature in the range of about 70°-100° C.
Claim 7
Dependent Claim
