Abstract

Abstract A process for the continuous production of curds for use in cheese making, wherein renneted and/or acidified milk is introduced under pulsation into a conduit whose wall is deformed under the effect of the pulsations and in which the curd is formed, and wherein the curd is collected at the outlet end of this conduit.

Claims Analysis

Total Claims: 21
Claim 1
Independent Claim 58 words
A PROCESS FOR THE CONTINUOUS PRODUCTION OF CURDS FOR USE IN CHEESE MAKING, WHEREIN RENNETED OR ACIDIFIED MILK OR MIXTURES THEREOF IS INTRODUCED UNDER PULSATION INTO A CONDUIT WHOSE WALL IS DEFORMED UNDER THE EFFECT OF THE PULSATIONS AND IN WHICH THE CURD IS FORMED, AND WHEREIN THE CURD IS COLLECTED AT THE OUTLET END OF THIS CONDUIT.
Claim 2
Dependent Claim 58 words
Claim 3
Dependent Claim 24 words
A process as claimed in claim 1, wherein external mechanical forces are applied to the wall of the conduit to produce additional deformation thereof.
Claim 4
Dependent Claim 35 words
A process as claimed in claim 1, wherein the coagulable protein content of a milk is increased and the milk subsequently introduced under pulsation into the aforementioned conduit after renneting or acidification or combinations thereof.
Claim 5
Dependent Claim 26 words
A process as claimed in claim 3, wherein the coagulable protein content of the milk is increased by adding a coagulable protein concentrate to the milk.
Claim 6
Dependent Claim 32 words
A process as claimed in claim 4, wherein the coagulable protein concentrate Is an aqueous solution of coagulable proteins in which the concentration of these proteins is higher than in the milk.
Claim 7
Dependent Claim 19 words
A process as claimed in claim 5, wherein the aforementioned aqueous solution is obtained by filtering milk on gel.
Claim 8
Dependent Claim 19 words
A process as claimed in claim 5, wherein the aforementioned aqueous solution is obtained by the ultrafiltration of milk.
Claim 9
Dependent Claim 21 words
A process as claimed in claim 5, wherein the aforementioned concentrate is a product obtained by drying the aforementioned aqueous solution.
Claim 10
Dependent Claim 25 words
A process as claimed in claim 3, wherein the coagulable protein content of the milk is increased by subjecting the milk to an ultrafiltration treatment.
Claim 11
Dependent Claim 55 words
A process as claimed in claim 3, wherein the non-fat solids content of the milk is adjusted to a value above that of the starting milk, but lower than 15% by weight, the curd is slabbed on leaving the coagulation conduit and the slabbed curd is collected in moulds in which it reintegrates and drains.
Claim 12
Dependent Claim 56 words
A process as claimed in claim 3, wherein the non-fat solids content of the milk is adjusted to a value of from 15 to 20% by weight, the curd is slabbed on leaving the coagulation conduit and the slabbed curd is collected on a drainage screen with a view to manufacturing a cheese in divided form.
Claim 13
Dependent Claim 39 words
A process as claimed in claim 3, wherein the non-fat solids content of the milk is adjusted to a value above 20%, and the curd is cut on leaving the coagulation conduit into unitary slabs each constituting a cheese.
Claim 14
Dependent Claim 21 words
A process as claimed in claim 6, wherein the aforementioned concentrate is a product obtained by drying the aforementioned aqueous solution.
Claim 15
Dependent Claim 21 words
A process as claimed in claim 7, wherein the aforementioned concentrate is a product obtained by drying the aforementioned aqueous solution.
Claim 16
Dependent Claim 55 words
A process as claimed in claim 7, wherein the nonfat solids content of the milk is adjusted to a value above that of the starting milk, but lower than 15% by weight, the curd is slabbed on leaving the coagulation conduit and the slabbed curd is collected in moulds in which it reintegrates and drains.
Claim 17
Dependent Claim 55 words
A process as claimed in claim 9, wherein the non-fat solids content of the milk is adjusted to a value above that of the starting milk, but lower than 15% by weight, the curd is slabbed on leaving the coagulation conduit and the slabbed curd is collected in moulds in which it reintegrates and drains.
Claim 18
Dependent Claim 56 words
A process as claimed in claim 7, wherein the nonfat solids content of the milk is adjusted to a value of from 15 to 20% by weight, the curd is slabbed on leaving the coagulation conduit and the slabbed curd is collected on a drainage screen with a view to manufacturing a cheese in divided form.
Claim 19
Dependent Claim 56 words
A process as claimed in claim 9, wherein the non-fat solids content of the milk is adjusted to a value of from 15 to 20% by weight, the curd is slabbed on leaving the coagulation conduit and the slabbed curd is collected on a drainage screen with a view to manufacturing a cheese in divided form.
Claim 20
Dependent Claim 39 words
A process as claimed in claim 7, wherein the nonfat solids content of the milk is adjusted to a value above 20%, and the curd is cut on leaving the coagulation conduit into unitary slabs each constituting a cheese.
Claim 21
Dependent Claim 39 words
A process as claimed in claim 9, wherein the nonfat solids content of the milk is adjusted to a value above 20%, and the curd is cut on leaving the coagulation conduit into unitary slabs each constituting a cheese.
