Abstract

Abstract A protein food product comprises a protein ingredient, particularly fish, and a water-soluble cellulose ether intimately associated with a gel matrix of a polyvalent metal salt of alginic acid. Such a product can be made by forming a mixture of the protein and cellulose ingredients together with a matrix precursor and sufficient water to form a sol which is subsequently set to a gel with the appropriate matrix setting agent.
