Production of high-purity isomaltose

Abstract

Abstract PURPOSE:A saccharide solution containing isomaltose is passed through a column packed with an alkli or alkaline earth metal type strongly acid cation-exchange resin and eluted with water to produce the titled compound that is used as a raw material for low-calorie and low teeth-decaying sweets at low costs in an industrial scale. CONSTITUTION:Glucose G is treated with glucoamylase GA to prepare a saccharide solution S containing isomaltose and the solution is passed through a column R packed with an alkali or alkaline earth metal type strong acid cation- exchange resin R and eluted with water into the fraction of high cotent in isomaltodextrin A; the isomaltodextrin-isomaltose high-content fraction B, isomaltose high-content fraction C, isomaltose-glucose high content fraction D and the glucose high-content fraction E sequentely and the fraction C containing more than 40% isomaltose on solid basis as the product. The fractions A and E are concentrated V and turned back to the reactor GA and the fractions B and D are turned back to the fraction column for refractionation.
