Claims Analysis

Total Claims: 10
Claim 1
Independent Claim 69 words
A process for treating poultry carcasses comprising contacting eviscerated and defeathered poultry with a treatment solution having a pH above about 11.5 and containing trialkali metal orthophosphate being present in an amount of from about 4% to about 12% based on the weight of the solution, for a period of time effective to remove, reduce or retard salmonella bacterial contamination and insufficient to cause organoleptic depreciation of the poultry.
Claim 2
Dependent Claim 69 words
A process for treating poultry carcasses comprising contacting eviscerated and defeathered poultry with a treatment solution having a pH above about 11.5 and containing trialkali metal orthophosphate being present in an amount of from about 4% to about 12% based on the weight of the solution, for a period of time effective to remove, reduce or retard salmonella bacterial contamination and insufficient to cause organoleptic depreciation of the poultry.
Claim 3
Dependent Claim 23 words
The process of claim 1 wherein the amount of phosphate is about 8% to about 12% based on the weight of the solution.
Claim 4
Dependent Claim 13 words
A process as recited in claim 1 wherein said orthophosphate is trisodium orthophosphate.
Claim 5
Dependent Claim 17 words
A process as recited in claim 1 wherein said pH ranges from about 11.6 to about 13.0.
Claim 6
Dependent Claim 26 words
A process as recited in claim 1 wherein residual phosphate is left on the poultry to provide reduced bacterial activity on the surface of the poultry.
Claim 7
Dependent Claim 23 words
A process as recited in claim 1 wherein said poultry is treated at a temperature equal to or less than about 27° C.
Claim 8
Dependent Claim 22 words
A process as recited in claim 5 wherein said poultry is treated at a temperature equal to or less than 10° C.
Claim 9
Dependent Claim 64 words
The process of claim 1 in which a major amount of trialkali metal orthophosphate effective to reduce bacterial contamination of poultry is combined with a minor amount of basic agent present in amounts insufficient to cause organoleptic depreciation of the poultry, said basic agent being selected from the group consisting of sodium hydroxide, potassium hydroxide, sodium carbonate, potassium carbonate, sodium tripolyphosphate and mixtures thereof.
Claim 10
Dependent Claim 33 words
A process as recited in claim 6 wherein the treated poultry is not washed after treatment whereby residual phosphate left on the poultry provides reduced bacterial activity on the surface of the poultry.
