Abstract

Abstract Meat food product having minimal shrinkage upon cooking is prepared by treating meat with an aqueous solution of an edible chloride salt present at at least about 0.2 molal. The solution is first electrolyzed by passage of a direct current through it until at least 25 coulombs per liter of solution have passed. The meat and electrolyzed solution are then combined and maintained in contact until moisturized meat is formed, and the moisturized meat then recovered. The minimally shrinking meat food product and an apparatus for its production are also disclosed.

Claims Analysis

Total Claims: 5
Claim 1
Independent Claim 133 words
In an apparatus for treating meat which includes meat support means, liquid injection means for injecting an aqueous meat treating solution into said meat movably positioned above said meat support means, and a reservoir for said meat treating solution positioned at a lower level than said meat injection means and communicating with said liquid injection means, the improvement which comprises a pair of spaced electrodes in said reservoir capable of delivering a current concentration of at least about 0.001 amperes per liter of said solution in said reservoir, and a direct current power source and an on-off switch operably associated with said spaced electrodes to pass current through said solution, said on-off switch being in an open position to stop the flow of current prior to the injection of said meat treating solution.
Claim 2
Dependent Claim 133 words
Claim 3
Dependent Claim 26 words
The apparatus of claim 1 wherein said power source is capable of passing a direction current of about 0.5 to about 20 amperes through said solution.
Claim 4
Dependent Claim 20 words
The apparatus of claim 1 additionally comprising a means for monitoring and regulating said passage of current through said solution.
Claim 5
Dependent Claim 22 words
The apparatus of claim 1 wherein said electrodes are capable of delivering about 0.002 to about 0.01 amperes per liter of solution.
