Abstract

Abstract Protein sources are subjected to hydrolysis by the action of specific proteases under neutral conditions and are then reacted with water soluble bivalent metal salts in an aqueous alkaline media to form metal proteinates which are then buffered thereby forming biologically acceptable metal proteinates which are protected from adverse acid or alkaline destruction.

Claims Analysis

Total Claims: 8
Claim 1
Independent Claim 118 words
A method of preparing buffered metal proteinates which comprises the steps of, (a) hydrolyzing a protein source in the presence of an enzyme under substantially neutral conditions to form a soluble aqueous mixture consisting primarily of tripeptides, dipeptides and naturally occurring amino acids, (b) dissolving into the mixture under neutral conditions at least one bivalent metal salt wherein the molar ratio of tripeptides, dipeptides and amino acids to metal ions is at least 2:1, (c) adding sufficient base to the aqueous mixture to raise the pH to between about 7.5 and 10 thereby forming one or more metal proteinates, and (d) buffering said metal proteinates with an alkaline buffer to a pH of between about 7.5 and 10.
Claim 2
Claim 3
Dependent Claim 22 words
A method according to claim 1 wherein the metal is selected from the group consisting of iron, zinc, manganese, cobalt and calcium.
Claim 4
Dependent Claim 13 words
A method according to claim 2 wherein the enzyme is a plant enzyme.
Claim 5
Dependent Claim 16 words
A method according to claim 3 wherein the hydrolysis is carried out at an elevated temperature.
Claim 6
Dependent Claim 19 words
A method according to claim 4 wherein the buffer contains a phosphate or carbonate salt of potassium or sodium.
Claim 7
Dependent Claim 12 words
A buffered metal proteinate prepared according to the process of claim 5.
Claim 8
Dependent Claim 13 words
A buffered metal proteinate according to claim 6 wherein the metal is iron.
