Claim 1
Independent Claim
131 words
A process for improving the flavor of fried foods containing fatty acids or esters thereof, comprising: frying said food in a fat or oil containing a safe an effective amount of a polymeric triarylphosphine compound having a molecular weight of about 600 to about 3000, wherein said polymeric triarylphosphine compound contains the moiety ##STR8## wherein x is an integer of from 2 to about 15 and R 3 and R 4 are each phenyl; or the moiety ##STR9## wherein X is selected from the group of oxygen, sulfur and nitrogen, R 1 and R 2 are each selected from the group of aryl and substituted aryl, and y is an integer from 1 to 4 said polymeric triarylphosphine serving to inhibit the build-up of hydroperoxides of fatty acids or esters thereof.
Claim 2
