Abstract
Abstract A novel process for producing cyclodextrin characterized by subjecting starch to the activity of cyclodextrin glycosyltransferase produced by cultivation of Bacillus sp. No. 38-2, Bacillus sp. No. 135, Bacillus sp. No. 169, Bacillus sp. No. 13 or Bacillus sp. No. 17-1, at a pH of between 6.0 and 10.5, thereby to hydrolyse the starch.
