Abstract
Abstract A process for the preparation of cold water swelling starch products, wherein starch is gelatinized, and the resulting starch paste is dried by means of microwave energy. The thusly prepared starch products, owing to certain outstanding properties, are useful in the manufacture of foods and, in other applications wherein the use of cold water swelling starches is called for.
