Abstract
Abstract Liquid and powder carotenoid coloring compositions suitable for the preparation of optically clear, stable aqueous solutions, and the preparation thereof, are disclosed. The composition consist of one or more carotenoid coloring substances, an antioxidant and an emulsifier ingredient comprising a polysorbate and a mixture of monoglycerides of low molecular weight saturated coconut fatty acids and up to two optional emulsifier components selected from the group consisting of a mixture of saturated fractions of coconut oil triglycerides and a polyoxyethylene (40) stearate wax.
