Abstract
Abstract This disclosure relates to a process of making a yeast protein isolate of low nucleic acid content. The process involves adding exogenous nuclease to a solubles fraction separated from a mass of ruptured yeast cells to hydrolyze the nucleic acid. The preferred source of exogenous nuclease is malt sprouts.
