Abstract
Abstract A normally flat, flexible conveyor band is moved endlessly through a baking oven and conforms to the shape of a support in the oven which configurates the band in a continuous downward direction from its lateral midpoint to each edge. A drain trough extends beneath each edge to catch cooking fluids produced during baking. The troughs are sloped toward a discharge outlet for removal of the fluids from the oven. At the outlet of the oven, the band resiliently resumes its flat configuration until its reentry into the oven along its endless travel.

Claims Analysis
Total Claims: 10
Claim 1
Independent Claim
133 words
Apparatus for baking particularly suited to commercial installations comprising, in combination: an oven means for supplying baking heat; an endless conveyor means passing through said oven means, said conveyor means including a normally flat imperforate flexible band having an upper surface for supporting the goods to be baked; support means for supporting said band as it is moved through said oven means, said support means having a locus of support surfaces on which said band moves, said band conforming generally to the shape of said support surfaces, said support surfaces being configurated in a downwardly direction from its lateral midpoint whereby fluids developed during baking are directed towards the longitudinal edges of said band; and means for catching the fluid run off from said band and removing said fluid from said oven means.

Claim 3
Dependent Claim
20 words
The baking apparatus of claim 1 wherein said surfaces are configurated downwardly from their midpoint in a smooth continuous fashion.
Claim 4
Dependent Claim
22 words
The baking apparatus of claim 2 wherein the downward slope of said surfaces relative the horizontal is between about 1* and 4*.
Claim 5
Dependent Claim
42 words
The baking apparatus of claim 1 wherein said means for catching said fluid is a trough positioned beneath each edge of said band and extending the length of said band within said oven means, said troughs being attached to said support means.
Claim 6
Dependent Claim
35 words
The baking apparatus of claim 4 wherein said troughs include a pair of generally spaced wall portions interconnected at the bottom, said bottom being inclined to direct said fluid collected therein towards a discharge outlet.
Claim 7
Dependent Claim
47 words
The baking apparatus of claim 5 wherein each of said trough bottoms are sloped from the outer ends of each trough downwardly toward the center of each trough whereby all the fluid collected therein is collected at a single discharge location at the midpoint of each trough.
Claim 8
Dependent Claim
31 words
The baking apparatus of claim 6 wherein means defining a conduit interconnects the discharge openings of each trough, said fluid being discharged from said oven means by a single discharge conduit.
Claim 9
Dependent Claim
31 words
The baking apparatus of claim 4 wherein each of said troughs have a generally V-shaped cross section, said troughs being inclined to direct the grease collected therein toward a discharge outlet.
Claim 10
Dependent Claim
118 words
The baking apparatus of claim 1 wherein said means for catching such grease is a trough positioned beneath each edge of said band and extending the length of said band within said oven means, said oven means including a pair of generally spaced side walls, said troughs being attached along one side wall to the side of said oven means and along the other side wall to said support means, said support means including an upright shield extending along the length of and beneath the edges of said band, said band, shields, and troughs forming a heat seal between the regions above and beneath said band whereby a temperature differential can be mainTained above and below said band.
