An expanded food product consisting essentially of 75-99 percent by weight of solvent-extracted oil-seed proteinaceous material having protein concentrations of at least 30 percent, and 1-25 percent by weight of fish protein concentrate and having an open-cell structure in which the majority of the cells have cell dimensions of greater length than average width, the length of said cells being substantially aligned, and a hydration ratio in the range of 2.0 to 8.5.
