Abstract THINNED HYDROLYZATES ARE PREPARED BY INITIALLY HYDROLYZING A PARTIAL HYDROLYZATE OF A D.E. LESS THAN 2.0 WITH ALPHA-AMYLASE AT 200* C.-212*F. AND CONTAINUING THE HYDROLYSIS THEREOF AT 185*-200*F. UNDER NON-RETROGRADING PROCESS CONDITIONS. THE ALPHA AMYLASE REQUIREMENTS NECESSARY TO PROVIDE THE THINNED HYDROLYZATES ARE SIGNIFFICANTLY REDUCED BY THE PROCESS. THE RESULTANT THINNED HYDROLYZATES EXHIBIT IMPROVED SACCHARIFICATION PROPERTIES AND RAPID FILTRATIONCHARACTERISTICS.
