Abstract
Abstract Native gluten is subjected to successive extractions with anhydrous isopropanol, aqueous alkali isopropanol, and aqueous acidic isopropanol to remove astringent principles. The gluten is then hydrolyzed with dilute acid to convert amide groups to carboxy groups. The non-astringent deamidized gluten is incorporated in beverages including acidic beverages such as fruit juices.
