Abstract DISCLOSED HEREIN IS A NOVEL METHOD OF SOLUBILIZING AND HYDROLYZING ISOLATED PROTEIN SO AS TO RENDER SUCH USEFUL FOR THE PREPARATION OF FOOD AND INDUSTRIAL PRODUCTS.
