Abstract
Abstract POTATOES INSERTED ENDWISE IN CUPS ARE PIERCED LENGTHWISE BY A CLUSTER OF CORING TUBES WHICH FORM CYLINDRICAL POTATO STICKS. THE RESULTING CORED POTATO BODIES ARE CONVEYED PAST ROTATING KNIFE GANGS WHICH SLICE THEM INTO PERFORATED SLICES. THE POTATO STICKS, POTATO SLICES AND WHOLE POTATOES CAN BE COATED EITHER BEFORE OR AFTER COOKING AND BEFORE FREEZING WITH BATTER CONTAINING SODIUM ALGINATE WHICH CONSTITUTES AN AGGLUTINANT AND A DEHYDRATION DETERRENT.
