Abstract

Abstract In probe testing a body of raw meat which has been severed from the carcass to determine how tender the meat will be upon cooking, the meat body is supported in depth against lateral displacement as the probe is pressed into the meat body for measurement of the resistance of the meat to the movement of the probe.

Claims Analysis

Total Claims: 5
Claim 1
Independent Claim 84 words
In a process for testing a raw meat body to determine how tender it will be upon cooking, the steps of pressing a pointed probe under a constant weight pressure and for a predetermined period of time into the body which is mounted in suspension and held firmly in its original form against substantial distortion during penetration by said probe, and measuring as an indication of tenderness the extent of penetration in depth of the meat by the probe during said period of time.
Claim 2
Dependent Claim 84 words
In a process for testing a raw meat body to determine how tender it will be upon cooking, the steps of pressing a pointed probe under a constant weight pressure and for a predetermined period of time into the body which is mounted in suspension and held firmly in its original form against substantial distortion during penetration by said probe, and measuring as an indication of tenderness the extent of penetration in depth of the meat by the probe during said period of time.
Claim 3
Dependent Claim 21 words
The process of claim 1 in which said meat body is substantially free of bone and is suspended along its sides.
Claim 4
Dependent Claim 27 words
The process of claim 1 in which a plurality of probes uniformly spaced over the top face of the meat body are pressed into the meat body.
Claim 5
Dependent Claim 17 words
The process of claim 1 in which sides of said meat body are supported against lateral displacement.
