Abstract CONVENTIONAL FROZEN PAR-FRIED POTATOES WHEN PREPARED FOR THE TABLE RAPIDLY LOSE THEIR CRISPNESS AND BECOME LIMP AND SOGGY. THIS PROBLEM IS CURED AS DESCRIBED HEREIN BY APPLYING A TREATMENT WITH RADIANT HEAT BEFORE THE POTATO STRIPS ARE SUBJECTED TO THE USUAL PAR-FRYING OPERATION.
