Abstract APPARATUS AND PROCESS ARE DISCLOSED FOR SORTING FRIUT-TYPICALLY DATES-ACCORDING TO THE MOISTURE CONTENT OF THE INDIVIDUAL UNITS IN THE BATCH. THE DATES ARE ACCELERATED BY SLIDING DOWN A CHUTE, AND THEN PROJECTED AGAINST A SURFACE WHEREBY THEY REBOUND TO A DEGREE RESPONSIVE TO THEIR SOFTNESS WHICH, IN TURN, IS RELATED TO THEIR MOISTURE CONTENT.
