Preparation of handmade-like buckwheat vermicelli

Abstract

Abstract PURPOSE:To prepare the subject buckwheat vermicelli having a handmade vermicelli-like taste by charging a raw material comprising buckwheat flour in a mortar equipped with a fixed blade, adding water to the buckwheat flour, rotating the mortar to convert the buckwheat flour into a group of small lumps, kneading the small lumps into a large lamp and subsequently shaping the lump into noodle lines. CONSTITUTION:A raw material M comprising only buckwheat flour or a mixture thereof with a diluting flour such as wheat flour is charged to a mortar 13 having a fixed blade 23 for cutting back the kneaded buckwheat flour on the inner surface thereof. Water is added to the raw material M and the mortar 13 is rotated to stir the raw material for kneading and solidifying the raw material into small lumps M1. The small lumps M1 are pounded with a pestle 12 during the rotation of the mortar 13 to form a large lump M2. The prepared large lump M2 is shaped into noodle lines with noodle-preparing rolls 27, thereby instantly providing the objective buckwheat vermicelli.
