A process for preparing a composition acoording to any preceding claim, which comprises the steps of: (i) partially filling a vessel with inert, solid contact masses and introducing into the vessel a lipid and the compound dissolved in an organic solvent; (ii) removing the organic solvent by evaporation, thereby forming a thin lipid film on the inner wall of the vessel and on the surfaces of the contact masses; (iii) introducing into the vessel an aqueous liquid containing the compound and a hydrocolloid gel-forming material and agitating the vessel, to form an aqueous dispersion of lipid, gel and the compound; and (iv) allowing the dispersion to stand.
