Abstract
Abstract @ The invention provides edible water-in-oil-in-water emulsions containing an emulsifying system in which the continuous aqueous phase has a pH between 6.5 and 2.0, contains between 10 and 80 wr.% of an oil and of which the discontinuous phase is at least 10 wt.% of the discontinuous aqueous phase and oil phase taken together. Preferably an o/w emulsifier such as protein, in particular egg yolk, is present and also a w/o emulsifier. The oil phase preferably has no solid constituents at 20°C. The emulsions are useful as foodstuffs such as sauces and dressings, and in soups and ice-cream.

Claim 1
Independent Claim
60 words
A water-in-oil-in-water (w/o/w) emulsion containing an emulsifying system, characterized in that the continuous aqueous phase has a pH between 6.5 and 2.0, and which contains between 10 and 80 wt.%, calculated on the total w/o/w emulsion, of an oil and of which the discontinuous phase is at least 10 wt.% of the discontinous aqueous phase and oil phase taken together.
Claim 2
Dependent Claim
Claim 3
Dependent Claim
19 words
A w/o/w emulsion according to claim 1, characterized in that the emulsifying system contains a protein, preferably egg yolk.
Claim 4
Dependent Claim
28 words
A w/o/w emulsion according to claim 2, characterized in that it contains between 0.1 and 5.0 wt.%, calculated on the total emulsion, of a protein, preferably egg yolk.
Claim 5
Dependent Claim
21 words
A w/o/w emulsion according to any of the preceding claims, characterized in that the emulsifying system also contains a w/o emulsifier.
Claim 6
Dependent Claim
29 words
A w/o/w emulsion according to any of the preceding claims, characterized in that it contains between 0.1 and 10 wt.%, calculated on the total emulsion, of a w/o emulsifier.
Claim 7
Dependent Claim
22 words
A w/o/w emulsion according to any of the preceding claims, characterized in that the oil phase contains no solid phase at 20°C.
Claim 8
Dependent Claim
26 words
A w/o/w emulsion according to any of the preceding claims, characterized in that the continuous aqueous phase and the discontinuous aqueous phase have a different composition.
Claim 9
Dependent Claim

A w/o/w emulsion according to any of the preceding claims, characterized in that the aqueous phases contain soluble salt.
Claim 11
Dependent Claim
91 words
Process for the preparation of a water-in-oil-in-water emulsion in which a stable w/o emulsion is prepared by emulsifying a mixture containing water, oil and a w/o emulsifier, adding the emulsion thus obtained to an aqueous phase with a pH between 6.5 and 2.0 in which the o/w emulsifier is present, followed by homogenization in such a way that the w/o/w emulsion contains between 10 and 80 wt.% of an oil and the weight of the discontinuous aqueous phase is at least 10% of the discontinuous phase and oil phase taken together.
