Abstract Translated from German Funktionelle Hydrolysate aus mikrobiellen Eiweißisolaten mit - einem Proteingehalt über 90 Gew.-%, - einem Nukleinsäuregehalt unter 2 Gew.-%, - einem Lipidgehalt unter 1 Gew.-%, - einer Suspendierbarkeit von 80-100 %, - einer Schäumbarkeit, charakterisiert durch eine Verschäumungszahl von 4-7, - einer Schaumstabilität, charakterisiert durch eine Halbwertszeit von 10 - 300 min., - einer Emulgierfähigkeit, charakterisiert durch eine Emulsionskapazität von 300 - 500 ml Öl/g Protein, - einem Molekulargewicht zwischen 125 000 und 100 Dalton, und daraus gewonnene Fraktionen von Eiweißhydrolysaten werden aus mikrobiellen Eiweißstoffen nach Extraktion der Nukleinsäuren und Lipide durch enzymatische Hydrolyse erhalten. Die Hydrolysate eignen sich als Nahrungsmittelzusätze.
