Abstract

Abstract Dry water-soluble particles having a microporous structure, such that the particles have a surface area in excess of 5 m 2 /gm and a pore volume of micropores less than 150A radius in excess of 5µl/g, are obtained by rapidly freezing and thereafter freeze drying an aqueous solutions and/or dispersions of edible material or by dehydrating these aqueous solutions and/or dispersions via contact with an anhydrous, water-miscible solvent and thereafter removing the solvent. The dry particles are used to readily sorb volatiles such as aromatics and carbon dioxide. Aromatized particles are combined at a low level and packaged with food substrates such as soluble powders of roasted vegetable material. The packaged product will upon initial opening and subsequent in-use openings provide a readily-apparent and stable headspace aroma. C0 2 -loaded particles are used to carbonate aqueous beverages.

Claim 10
Independent Claim 72 words
A method of preparing edible, water-soluble or water-dispersible particles as claimed in any one of the preceding claims by (1) dehydrating an aqueous solution and/or an aqueous dispersion of the edible material by contact with an anydrous, water-miscible, organic solvent and thereafter removing solvent from the dehydrated material, or (2) by rapidly freezing an aqueous solution and/or aqueous dispersion of the edible material and thereafter freeze drying the frozen solution and/or dispersion.
Claim 11
Dependent Claim 38 words
A method according to claim 9 herein the preparation is by spraying the aqueous solution and/or dispersion into the organic solvent or in which the aqueous solution and/or dispersion is rapidly frozen by direct contact with liquid nitrogen.
