Abstract
Abstract A deep fryer, using oil on a layer of water, has a container which receives a measured quantity of the water contaminated during frying, but does not allow any cooking oil to pass through. The large flow valve used ensures that all waste solid matter can be discharged. The drying tank (2) is funnel shaped (2a) and has an emptying valve (6) in the neck (5), operated by a knob (7). A container (8) is fitted to the valve outlet. When contaminated, the water (4) is released into the container. When this is full, some water is left in the tank for topping up.
