Novel gemini polyhydroxy fatty acid amide compounds having the formula: ##STR8## wherein: X is selected from the group consisting of unsubstituted, linear alkyl moieties having the formula --(CH 2 ) n --, wherein n is an integer from 2 to about 15, and unsubstituted, branched alkyl moieties having from 2 to about 15 carbon atoms; Z and Z' are independently selected from the group consisting of --CH 2 --(CHOH) p --CH 2 OH, --CH(CH 2 OH)--(CHOH) p-1 --CH 2 OH, --CH 2 --(CHOH) 2 (CHOR 1 )(CHOH)--CH 2 OH, where p is an integer from 1 to 5, inclusive, and R 1 is H or a cyclic mono- or polysaccharide, and alkoxylated derivatives thereof, or one of Z or Z' is hydrogen; and R and R' are the same or different hydrocarbyl moieties having from about 1 to about 21 carbon atoms and can be saturated, branched or unsaturated and mixtures thereof.

Novel gemini polyhydroxy fatty acid amide compounds having the formula: ##STR8## wherein: X is selected from the group consisting of unsubstituted, linear alkyl moieties having the formula --(CH 2 ) n --, wherein n is an integer from 2 to about 15, and unsubstituted, branched alkyl moieties having from 2 to about 15 carbon atoms; Z and Z' are independently selected from the group consisting of --CH 2 --(CHOH) p --CH 2 OH, --CH(CH 2 OH)--(CHOH) p-1 --CH 2 OH, --CH 2 --(CHOH) 2 (CHOR 1 )(CHOH)--CH 2 OH, where p is an integer from 1 to 5, inclusive, and R 1 is H or a cyclic mono- or polysaccharide, and alkoxylated derivatives thereof, or one of Z or Z' is hydrogen; and R and R' are the same or different hydrocarbyl moieties having from about 1 to about 21 carbon atoms and can be saturated, branched or unsaturated and mixtures thereof.
