Abstract
Abstract Coated frozen cheese granules are prepared by freezing the granules and applying an aqueous coating containing one or more modifying additives. On baking the cheese the additives in the frozen coatings distribute throughout the cheese to obtain modifications of flavor and other properties.

A frozen cheese product for use as a topping on baked foods, comprising quick-frozen cheese granules having a thin aqueous coating frozen on the exterior surface of the individual granules, said coating being distributed over the outer surface of the individual granules, the coated granules being in free-flowing condition, the amount of said coating comprising about 0.5 to 4 parts by weight per each 100 parts of uncoated granules, and the coating consisting of at least one layer containing at least one cheese additive.
