Abstract
Abstract An emulsifying system for use in the production of cosmetic or pharmaceutical compositions in the form of an emulsoid or gel comprises (i) at least one fatty acid having from 8 to 22 carbon atoms or a protein condensate of a fatty acid having from 8 to 40 carbon atoms and a polypeptide of animal origin, (ii) a polyoxyethylenated sterol and (iii) a phosphatide.
