Abstract
Abstract Gelatins which have a high setting speed but a lowered viscosity are prepared by lowering their microgel content. For this purpose, aqueous gelatin solutions are subjected to the action of mechanical shearing forces, the shear stresses being between 10 4 and 10 8 Pascal. The peptide content of the gelatin remains virtually unchanged with this process.
