Total Claims: 3
Claim 1
Independent Claim
90 words
In a method for the production of fish meat powder retaining the functional properties of fresh raw fish meat by mincing fresh raw fish meat or frozen SURIMI, adding water to form a slurry and spray drying the resulting fish meat slurry, the improvement comprising incorporating a water-soluble protein into said slurry in an amount sufficient to lower its viscosity, and wherein said water-soluble protein is a member selected from the group consisting of egg white albumin, whey protein, serum albumin, soybean protein and a water-soluble derivative of sodium caseinate.
Claim 2
Dependent Claim
