Abstract

Abstract Food products are baked in a forced-convection oven having a baking chamber into and out of which a rack carrying the food products on superposed trays may be rolled. Air is circulated horizontally through the baking chamber by a pair of vertically disposed cross-flow fans. The circulating air enters the baking chamber through alternate ones of two opposed side walls, and the major portion of it leaves the baking chamber through the other one of these side walls while a minor portion leaves the baking chamber through a back wall.

Claims Analysis

Total Claims: 7
Claim 1
Independent Claim 134 words
A method of baking food products supported on superimposed horizontal racks in a chamber, the chamber being defined in part by opposed vertical apertured side walls and an intermediate vertical apertured side wall, comprising: a. during a first main phase of a baking cycle, causing air to flow horizontally through one of the opposed side walls into the chamber, and to leave the chamber horizontally through both the other opposed side wall and the intermediate vertical side wall; b. during a second main phase of the baking cycle, causing air to flow horizontally through said other opposed side wall into the chamber, and to leave the chamber horizontally through both said one opposed side wall and the intermediate vertical side wall; and c. repeating said baking cycle until the food products are baked sufficiently.
Claim 2
Claim 3
Dependent Claim 31 words
A method according to claim 1 in which the air flowing horizontally through said intermediate vertical side wall is caused to do so along substantially the entire height of said chamber.
Claim 4
Dependent Claim 49 words
A method according to claim 1, which during a shorter intermediate phase of the baking cycle separating said main phases, includes causing air to flow horizontally through both said opposed side walls into said chamber, and to leave the chamber horizontally substantially exclusively through the intermediate vertical side wall.
Claim 5
Dependent Claim 27 words
A method according to claim 3 in which the duration of the intermediate phase is between 5 and 25 percent of the duration of each main phase.
Claim 6
Dependent Claim 40 words
A method according to claim 1 in which the amount of air leaving the chamber horizontally through the intermediate vertical side wall during either of the main phases is not more than 30 percent of the air entering the chamber.
Claim 7
Dependent Claim 29 words
A method according to claim 1 in which the air which has left the chamber is caused to flow substantially only horizontally en route to its point of reentry.
