A process for altering the flavor and aroma of a tobacco product which comprises adding thereto from about 0.01 to 500 parts per million of at least one N-substituted pyrrole having the formula ##SPC31## wherein R 1 and R 2 are the same or different and represent hydrogen or methyl and R 3 represents alkyl containing eight to fourteen carbon atoms, alkenyl containing three or four carbon atoms, cycloalkyl containing three to twelve carbon atoms, or phenalkyl containing seven to eleven carbon atoms.
