Abstract

Abstract This is a process for the recovery of protein in an aqueous solution by precipitating the protein as curd, washing the protein with a water-miscible organic solvent to remove unwanted color and flavor constituents, providing a series of zones in each of which zones the solvent-washed curd is mixed with water, the mixture is passed to a separator to separate the curd from the liquid with this process being repeated until the amount of solvent in the curd is reduced to less than about 10% by weight of the liquid portion of the curd. The pH of the curd is then adjusted to a desired value and thereafter the curd may be handled in a wet state or dried.
