Abstract
Abstract A process for converting granular starch to dextrose wherein the unconverted starch retains its granular nature. The conversion is accomplished by treatment with a bacterial alpha-amylase alone or in combination with a glucoamylase, at a temperature above the normal initial gelatinization temperature of the starch, followed by treatment with a glucoamylase at a lower temperature.
