Abstract The use of saturated and unsaturated polyalkyl bicyclo-(2.2.2)octanes and/or alcohols and aldehydes thereof to alter organoleptic properties, and particularly the aroma, of consumable materials, together with compositions containing such bicyclic materials; and novel bicyclo-(2.2.2)-octane derivatives and processes for preparing them.
