Abstract Foodstuff flavor and aroma augmenting compositions containing a quantity of at least one di-lower alkyl or lower alkylene acetal of a 3-phenyl pentenal sufficient to alter the aroma and/or organoleptic characteristics of said compositions, methods for preparing same, and foodstuff materials containing at least one of said acetals.
