Abstract

Abstract A steam injector for steaming food products, such as the heels and crowns of buns. The steam injector incorporates a platen covered by a relatively rigid clamping plate enclosing steam forming chambers and passages in the platen, and a relatively flexible, thin cover plate overlying the clamping plate. The clamping and cover plates define orifices through which steam jets upwardly into an overlying steaming chamber. The steaming chamber includes side and back flanges which are integral with the cover plane and is topped by a top plate to define an open front. A juxtaposed removable spatula is formed to provide the front wall of the steaming chamber and to support bun portions to be steamed. The base of the spatula defines steam passages ordered similarly to the steam orifices and provides crowned diffuser members overlying the orifices to baffle and diffuse the steam jetting through the steam passages.

Claims Analysis

Total Claims: 3
Claim 1
Independent Claim 203 words
A bun spatula adapted to be positioned in a steam injector in which steam is injected upwardly towards said spatula, said spatula comprising an expansive planar base member and a handle, said planar base member defining a plurality of steam diffusion passages which are arranged in rows and columns and which are equidistantly spaced from each other in rectilinear directions, each steam diffusion passage comprising an aperture in said planar base member, which, when viewed in plan view, comprises a pair of narrow open aperture sections spaced apart laterally by a diffuser member, said diffuser member being elongate and being integral at its ends with said base member, said diffuser member rising from its ends towards the center to provide a crowned configuration with the lower surface of said diffuser member being spaced upwardly of the lower surface of said base member, thereby to elevate bun portions centrally with respect to said planar base member, so that as steam is injected upwardly to enter an overlying bun portion, the steam may strike the diffuser member and will then diffuse laterally to pass upwardly through the adjacent aperture sections into an overlying bun portion without producing a skin effect above the steam diffusion passages.
Claim 2
Dependent Claim 203 words
Claim 3
Dependent Claim 61 words
A bun spatula in accordance with claim 1 wherein said bun spatula further comprises an expansive front wall projecting vertically upwardly from the front edge of said expansive planar base member, said handle being fixedly secured to said front wall, said wall being proportioned to serve to close the front of a steam injector when the bun spatula is juxtaposed therewith.
