Abstract
Abstract Legume seeds are held in an aqueous medium for 24-48 hours at a temperature of 45.degree.-55.degree.C., the pH of the medium preferably being 5.0-5.5. The treated seeds exhibit increased digestibility, and less flatulence is experienced when they are consumed.
