Claims Analysis
Total Claims: 6
Claim 1
Independent Claim
137 words
A self-basting poultry product which during cooking bastes the skin over a poultry carcass meat portion, comprising a skincovered raw dressed poultry carcass meat portion having enlarged reservoirs of added edible fat in said meat portion, and flow passages leading from reservoirs in said meat to said skin to permit fat flow for basting said skin, the cross section of said flow passages being substantially less than the cross section of said reservoirs of fat, and including a body of added edible fat lying under and adjacent said skin and distributed over the surface of said meat portion, said fat being present in an amount whereby subsequently during cooking said edible fat flows from said body under said skin and from reservoirs in said meat through flow passages to baste said skin over said poultry meat portion.
Claim 2
Dependent Claim
Claim 3
Dependent Claim
113 words
In a process for treating a raw poultry carcass having a skin-covered meat portion, the steps of passing hollow needles into the meat portion of said carcass through the skin thereof, discharging edible fat through said needles to form enlarged depots of edible fat providing reservoirs in said meat and also to form a body of added edible fat lying under and adjacent said skin and distributed over the surface of said meat portion, said depots having greater cross-sectional area than said needles, and withdrawing said needles to leave flow passages leading from reservoirs in said meat to said skin whereby during cooking said edible fat flows in basting contact with said skin.
Claim 4
Claim 5
Dependent Claim
27 words
The process of claim 2 in which said skin is flexed independently of the breast muscle to facilitate the introduction of said edible fat below said skin.
Claim 6
Dependent Claim
29 words
The process of claim 2 in which said skin is provided with perforations through which said fat may flow for distribution of the fat over the skin during cooking.
