Abstract JUICE OBTAINED FROM ALFALFA OR OTHER LEAFY GREEN CROPS IS TREATED TO ISOLATE A PROTEIN FRACTION USEFUL FOR SUPPLEMENTING LOW-PROTEIN FOODS. A FEATURE OF THE INVENTION IS THE APPLICATION OF TREATMENTS TO FIRST REMOVE A HIGHLY-PIGMENTED CHLOROPLASTIC PROTEIN FRACTION, AND THEN TO PRECIPITATE A PROTEIN FRACTION FREE FROM CHLOROPHYLL AND OTHER PIGMENTS.
