Abstract A HARD STEARINE BUTTER FOR CONFECTIONERY IS PREPARED FROM A TRIGLYCERIDE OIL CONTAINING MONO- AND POLY-ETHENOIC ACIDS OF WHICH 25 TO 85% BY WEIGHT OF TOTAL FATTY ACIDS ARE UNSATURATED C20 AND C22 ACIDS, FOR INSTANCE A RAPESEED OR OTHER CRUCIFERA OIL, BY SELECTIVE HARDENING TO AN IODINE VALUE OF BETWEEN 70 AND 85 WITH ISOMERIZATION TO A TRANS INDEX OF BETWEEN 50 AND 80, AND FRACTIONATION TO ISOLATE A FAT FRACTION OF D20 AT LEAST 1400 AND D34 BELOW 300.
