Abstract

Abstract Non-caking sodium propionate is obtained by coating sodium propionate with a sorbitan higher fatty acid ester such as sorbitan monolaurate. The coating is performed by adding 10-500 ppm by weight of the sorbitan higher fatty acid ester to an aqueous solution of sodium propionate, removing the aqueous medium from the resultant mixture, and drying it. An organic medium may be used instead of the aqueous medium. This coating prevents sodium propionate from caking during storage.
