Abstract

Abstract A thermo-gelable Beta -1,3 glucan-type polysaccharide is made by the aerobic cultivation of certain microorganisms. It generally resembles the known thermally gelable Beta -1,3 glucan known as ''''curdlan'''' but possesses definite advantages thereover, particularly when used in the food industry. Also, it may be used advantageously as a substitute for agar in various foods.
