Abstract
Abstract The present invention concerns a process and apparatus for fermentation in a vacuum. The apparatus is useful in the fermentation of a mass, specifically, the fermentation of vegetables such as cabbage, the apparatus consisting of an airtight container, preferably suitable for storage on a pallet, and equipped with means of creating a vacuum therein.
