Abstract TURBIDIMETRIC METHOD FOR THE DETERMINATION OF THE FAT CONTENT OF MILK. IT IS BASED ON THE USE OF ACETIC ACID IN COMBINATION WITH A PARTICULAR CLASS OF SURFACTANTS TO FORM A PARTICULAR DISPERSION OF THE MILK SAMPLE IN WHICH, AFTER THE ADDITION OF AN AQUEOUS DILUENT, TURBIDITY IS DUE SOLELY TO THE DISPERSION OF THE FATS AS COLLOIDAL GLOBULES.
