Abstract
Abstract Process for making candy floss from a cooked slurry or syrup, containing sugar, salt, bicarbonate of soda and molasses, at least part of the sugar is brown sugar. Most of the moisture is removed from the slurry by cooking the slurry at a high temperature. A pressurized gaseous medium such as air, is used to diffuse the cooked candy as it is sprayed from a discharge opening, and convert it into floss form.
